Charlotte’s Strawberry Crisp with Pine-Nut Topping
Ingredients
6 cups strawberries
Juice of 1/2 lemon
1 tablespoons sugar
2 teaspoons cornstarch
2/3 cup brown sugar
5 tablespoons cold butter
1/2 cup rolled oats
1/2 cup all-purpose flour
1/2 cup crushed pine nuts
1/2 teaspoon cinnamon
1/2 teaspoon almond extract
Toss strawberries with lemon juice, sugar, cornstarch; spread in a greased 8-or-9-inch pan.
Combine brown sugar, butter, rolled oats, flour, pine nuts, cinnamon, a dash of salt (and almond extract if you like) in a food processor
Crumble over fruit and bake at 375 for 40 to 45 minutes.

Peter Ferry, authorof Travel Writing,
will attend
our April 12 meeting.
Peter taught in the English Dept.
at Lake Forest
High School
until he retired in 2007.
Since then he's written a novel and learned a lot about the publishing business. He'll have stories to share with us and will answer our questions.
Peter has written textbooks for Rand McNally and travel articles for the Chicago Tribune and the Sun-Times. His short stories have appeared in Story Quarterly, Overtures, the New Review of Literature, and McSweeney's. He has won the Illinois Arts Council Literary Award for Short Fiction. He lives in Evanston.
